Dave is the Market at DelVal’s head chef, and Rose Bank Winery’s preferred caterer. Many of his prepared items can also be found at Shady Brook Farm. Chef Mergen began his culinary journey at the age of 13 in Newtown, PA. Starting as a weekend dishwasher at Marie’s Colonial Kitchen, Dave quickly became a short order cook. Spending more and more time working in kitchens throughout high school and college, he learned to love the organized chaos of restaurant work! When college didn’t work out so well, Dave left his position as sous chef at the Blue Ram in Washington Crossing, PA to attend the Culinary Institute of America.

During the 1990’s Dave was the executive chef at Lambertville Station Restaurant and Inn, where he met the general manager who would later become his wife, Lisa. In 2003, Dave and Lisa purchased a small gourmet store right outside of the Peddler’s Village area in Buckingham, PA and started JustFood Catering. JustFood expanded to The Market at DelVal in 2011. The vision is simple; restaurant quality prepared meals that guests can take home to their families. The small store atmosphere was fun, but Dave and the culinary team at JustFood an The Market at DelVal soon saw the opportunity to create unique (and delicious!) catered events all around Bucks County. Since then, JustFood Catering and The Market have evolved into some of the area’s most popular caterers, specializing in wonderful custom menus that enhance each event.

Dave and Lisa have two boys and live in the Doylestown area. Dave has two pretty cool vices…spending time on his sailboat and making homemade whiskey. When we asked Dave what he likes to pair his whiskey with, his response was, “Anything BBQed!” His favorite meal of the day is breakfast as he loves cooking with eggs.
